In a contemporary twist on the intersection of technology and the food service industry, Seattle has witnessed the debut of a novel robotic solution aimed at streamlining salad preparation. Sweetgreen, a popular restaurant chain with 230 locations across the United States, has introduced an advanced robotic system known as the “Infinite Kitchen” at its outlet situated at the corner of 11th Avenue and East Pine Street. The Infinite Kitchen is a large-scale, stainless steel and glass contraption designed to automate the process of creating salads and protein bowls. On opening day, the facility boasted a remarkable capacity, able to generate up to 500 orders per hour. Customers have the convenience of placing orders via a mobile application or through automated touch screens located within the restaurant. After an order is placed, the system activates, allowing human employees to facilitate the initial stages of order assembly.
The process begins as a human worker positions a container for the order into a designated slot on a “smart track,” which then transports the bowl through the assembly line. During its journey, over 40 tubes systematically dispense the required ingredients based on the customer’s specifications. While the robot handles the bulk of the preparation, human staff members remain essential to ensure that supplies are adequately stocked and to make any necessary adjustments to the orders, such as mixing salads to meet particular preferences or addressing potential discrepancies.
Despite the technological intervention, Sweetgreen maintains a workforce of 22 employees at this location. However, the exact number of workers that the robot has replaced remains undisclosed. This adaptation reflects a broader industry trend where the mounting pressure of labour costs is propelling establishments to integrate more automated solutions than ever before.
